Monterey Chicken By Nicole Harmon
2 chicken breasts, boneless skinless
¼ Cup mozzarella cheese

¼ Cup Monterey/Cheddar blend cheese 
4 slices bacon
½ tsp garlic powder
½ tsp onion powder
BBQ sauce 
Lime wedges

Cut in half & cook bacon till crispy then set aside.
Mix all dry spices together then season chicken breasts. Then cook chicken over medium heat. Let cook until almost done. 
Baste with BBQ sauce on both sides and continue cooking.
When chicken is cooked through, place half of the bacon on top of each piece. Mix the cheeses together and spread evenly over each piece.
Bake until cheese is melted.
Sprinkle with any remaining bacon & chives then squeeze a lime wedge over each before serving.

Chicken Fiesta By: Alice Locklear. A pack of chicken tenderloins. Mix together a packet of ranch dressing and taco seasoning together. Sprinkle over chicken. Dump in a can of rotel, corn, and black beans (all drained). Place a block of cream cheese on top. Cook on low for 7-8 hours in the crock pot. Before serving, stir together and shred the chicken. Serve over rice. It looks like slop but sooooo good! Another one I like that I call Chicken S*** is spray a 9X13 tin with Pam. Place a whole pack of chicken tenderloins in the tin. Salt and pepper to taste. Pour 2 cans of cream of chicken over chicken. Spread 1 cup of cheddar cheese on top of the soup. Then spread 1-2 bags of garlic cheddar croutons on top of the cheese. More cheese on top of the croutons if youre a cheese fan (I am!) Cook on 375 for 2 hours. The soup turns the croutons into stuffing and with the cheese mixed in, it is delish! I usually serve over mashed potatoes.

Mediterranean Chicken by Jody Lane Molnari: 6 salt & peppered chicken thighs browned in EVOO in cast iron skillet, add 1 jar drained spanish olives, 1 pint grape or cherry tomatoes cut in half, 1 extra large vidalia onion cut in strips, add a little more S&P & EVOO over all, and springs of fresh basil. Bake at 400 degrees for 40 minutes. Sprinkle with feta cheese and use a crusty bread to soak up the oil-juices. Delightful!
