Recipe Description

If you love deviled eggs, you will enjoy this a lot. Actually, you could use your own favorite deviled egg recipe, but this is my favorite. Serve with flavored crackers and it will sure to be a hit. I was unsure about the crackers, but it gives you a nice flavored crunch with creamy deviled eggs. Enjoy!

Recipe Directions

In a large saucepan, cover the eggs with cold water: make sure the eater is a good inch above the eggs. Bring to a rapid boil. Cover the saucepan and remove from the heat and let stand for 15 minutes. (I have just started steaming the eggs so they are easy to peel, it does work, steam for the same amount of time, I also use duck eggs and I extend the time to 30 minutes). Drain the water from eggs and cool them under cold water. Peel. Halve them lengthwise. Coarsely chop half the egg whites and transfer to a large bowl. Add the remaining whites and all of the yolks to a food processor along with the mayo, sugar and mustard. Process unti smooth. Scrape the mixture into a bowl and blend with the chopped egg whites. Season with salt and pepper. You can make these the day before and refrigerate overnight.
