- 2 Small Sweet Potatoes
- 2 Cups Kale
- 1 Clove Garlic
- 3 Cups Vegetable Broth
- 1 Tsp. Herbs D'Province
- Salt and Pepper
Recipe Description
This slightly sweet, nutty rice is the perfect side dish for this time of year, featuring sweet potatoes and a bit of kale with some pine nuts sprinkled in. It is a wonderful flavorful vegetarian main meal, too. I served it to my family and my step daughter ate that for her entire dinner while the rest of us enjoyed some juicy pork with it!
