- 1 tablespoon vegetable oil
- 1 tablespoon unsalted butter
- 2 pounds of your favorite potatoes, peeled and cut into ½ cubes
- 6 ounces/1cup ham, cut into ½ inch cubes
- 1 large or 2 small onions, chopped
- 1 large red bell pepper, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon fresh sage, finely chopped
- 1 teaspoon fresh rosemary, finely chopped
- 4 large eggs
