Carrot Cake Pancakes for breakfast makes every morning better! Fresh shredded carrots and spices gives these pancakes delicious flavor. I have been trying to clean out our refrigerator and pantry since we are moving in a few days. Pancakes for dinner seemed like a good idea so why not carrot cake pancakes?! I mean, there are vegetables involved, right. These pancakes are a little on the thicker side so they will definitely fill you up. I also like to make these with whole wheat flour but did not have any on hand. You can buy pre shredded carrots or use a box grater. I love to add walnuts or pecan pieces but since my son would be eating these I didn’t add them.
