Recipe Description

This recipe is so easy and so delicious! I think the earthquake cake is more appealing inverted so I line my pan with parchment paper so I can get that baby out of there easier! The delicious combination of coconut and pecans makes this cake so moist. This is one of those cakes that tastes even better the second day! That makes it a great party cake because it can be made ahead of time.
