- 14 oz can diced tomatoes (or fresh), drained
- 1 ear corn, fresh (husk intact)
- 1 zucchini, chopped
- ½ large red onion, sliced
- 3 garlic, roughly chopped
- 6 oz mozzarella, chopped
- Olive oil
- Garnish: fresh basil
