Grandma’s Old-Fashioned Oatmeal Pie

It’s similar to Pecan Pie, only better! The syrupy base is chocked full of pecans, oatmeal, and coconut. Scrumptious with or without whipped cream!!
3 eggs
2/3 cup white corn syrup
1/3 cup honey
1/2 cup light brown sugar
1/2 stick (4 tablespoons) butter or margarine, melted
2 teaspoons vanilla
2 tablespoons flour
3/4 cup flaked coconut
3/4 cup pecans, finely chopped
1 cup oats, quick or old-fashioned, uncooked
1 – 9″ Deep Dish pie crust, unbaked
Place a pizza pan (or similar) in the oven and preheat to 350 F.
In a mixing bowl, whisk the eggs. Whisk in the corn syrup, honey, brown sugar, melted butter, vanilla, and flour. With a spoon, stir in the coconut, pecans, and dry oatmeal.
Place the unbaked pie crust on the preheated pizza pan and pour the filling in it.
Bake for 45-55 minutes, or until the center is set. (If the top or crust is browning too much, tent a sheet of aluminum foil lightly over the top of the pie.)
Cool completely before slicing. Serve with or without whipped topping/prepared whipped cream.
((NOTE: You can use a whole cup white corn syrup, omitting the honey, if desired.))
