Mediterranean Cauliflower Couscous Salad is a healthy recipe with fresh summer vegetables and herbs straight from my organic garden, smokey spice blend roasted chickpeas and a homemade lemon feta vinaigrette. This would be the perfect summer lunch or light dinner salad or side side or vegetarian main dish.
