“Can you bring a side dish for barbecue? Something with melon would be great ” Challenge accepted. I’ve never tried to combine melon with something hearty. Ok, everyone knows melon with prosciutto. But that’s totally boring. Therefore, I decided to make a salad with watermelon. I know from the Greeks that you can combine feta and melon very good. And so I decided this combination will be my choice. I chose a yellow watermelon, just for the look, you can also use a “normal” watermelon. With chopped mint I have added another stunning flavor to the vinaigrette. I’ve also mixed young spinach leaves to the melon, so you can official call it salad. And because I love how sweet and sour they are bursting in the mouth, I also added pomegranate seeds. This is a risky composition, but it’s definitely worth it. Mmmmmh this “salad” is delicious. Each bite another taste but overall harmony. My hosts also seemed quite pleased. Try it, but don’t underestimated the size of the melon. I had way too much melon left. I simply nibbled it.
