Ingredients
- 1-2 organic oranges
- 1 + ½ cups (200g) all-purpose flour
- 1 cup (80g) unsweetened shredded coconut
- 2 tsp baking powder
- ½ tsp baking soda
- ⅓ cup (80ml) vegetable oil
- 1 + ¼ cup (150g) buttermilk
- 1 tsp vanilla extract
- 1 egg
- ½ cup (100g) sugar
- 1 cup (230g) unsalted butter, softened to room temperature
- 4 cups (480g) confectioners' sugar
- 3-4 tbsp orange juice
- 1 teaspoon pure vanilla extract
- pinch of salt, to taste
- 2 tsp orange zest to decorate

Recipe Description
Orange Creamsicle Cupcakes with Coconut are a tropical taste explosion! An orange-infused coconut vanilla cupcake topped with vanilla orange buttercream or a summer friendly orange glaze. The last days were very summerly, everyone was out and the beer gardens were full! I have to admit we’re both not the biggest fans of being outside at the moment because of our hayfever which makes spring a bit difficult.
