- 1 pound sugar snap peas, trimmed and strings removed
- A 5-finger pinch mint leaves roughly chopped at the last minute
- ¼ cup Simple Lemon Dressing (see below)
- Flaky sea salt
- Lemon juice
- Large handful delicate, peppery arugula
- SIMPLE LEMON DRESSING:
- ½ cup extra-virgin olive oil
- ½ cup freshly squeezed lemon juice
- ¼ tablespoon garlic, minced
- ½ tablespoon shallot minced
- ¼ tablespoon Dijon mustard (creamy, not whole grain)
- ½ teaspoon flaky sea salt
- Freshly ground black pepper

Use my simple lemon dressing and you will be surprised how wonderful they are! This all-purpose dressing brightens whatever it touches, like this Snap Pea Salad or a Greek Salad.
