- 1 Pound Ground Beef
- 1 Pound Italian Sausage
- 2 Tbsp. Olive Oil
- 2 Bell Peppers
- 1 Onion
- 1 Carrot
- 1 Stalk of Celery
- 2 Cloves Garlic
- 2 Cups Diced Tomato
- 4 Cups Tomato Sauce
- 3 Cups Beef Stock
- 1 Cup Whole Grain Rice
- 1 Tbsp. Italian Herb Paste
- 1 Tbsp. Red Pepper Paste
- Salt and Pepper To Taste
- 1 Cup Spinach
- 1/2 Cup Shredded Mozzarella
- Parmesan Cheese
Recipe Description
I don’t know about you, but one of my favorite things is a traditional stuffed pepper. My mom used to make them, I loved them. In the summer I make them, but in the winter I use a lot of frozen peppers and tomatoes from my garden to make this soup! It is one of our favorites. I am requested to make it at least once a season.
