- ½ cup (1 stick) unsalted butter, softened
- ¾ cup white sugar
- 2 eggs, at room temperature
- 1 tsp vanilla extract
- ¾ cup white chocolate chips
- 2¼ cup all-purpose flour, plus a little extra for shaping loaves
- 1½ tsp baking powder
- ¼ tsp salt
- 2 cups white chocolate, melted

It’s Girl Scout cookie time!! Try a different take on the classic Thin Mints cookie with this biscotti recipe…because two cookies are better than one! Crushed Thin Mints cookies and white chocolate chips are mixed in the biscotti dough, then topped with melted white chocolate and more crushed Thin Mints.
