Ingredients
- 2 Boneless skinless chicken breast, cubed
- 3 Links Italian sausage sliced into ¼ inches pieces
- 1 TBS olive oil
- 4 cups chicken stock
- 8-10 oz Jar salsa
- 2 cups Rice
- ¼ cup Fresh chopped parsley
- 1 Tomato diced
- salt and pepper to taste
- Tabasco sauce (for those who like it spicier)

Weeknight Kid Friendly Jambalaya – By now you all should know my MO. I use up what we have in the pantry and the fridge. However, the other obstacle that I have is to contend with is making these meals kid friendly. This past week I made a new dish that checked all of the boxes. Ingredients used from the pantry, check. Use up what was in the freezer, check. Kid friendly and approved, check and check. Delicious, CHECK. Please allow me to now introduce Weeknight Kid Friendly Jambalaya. You will be glad that I did.
