Breakfast Burrito The Healthy Way

First of all, let me say there’s no wrong way to make a breakfast burrito! These American Southwest dish are sometimes be called a wrap. They are composed of an American-style breakfast wrapped inside a flour tortilla burrito.

Several sources claim that Tia Sophia’s, a New Mexican diner in Santa Fe, was the first use of the term “breakfast burrito” on a menu, in 1975, although a rolled tortilla containing some combination of eggs, bacon, potatoes, and cheese existed in New Mexican cuisine well before that.

Since it usually consist of an American-style breakfast wrapped  inside a flour tortilla burrito, there’s really no wrong way to make it and can (and should ) be assembled into whatever you like.

This version is a super healthy version, with avocado and tomato (well, hello there Superfoods!) and a shallot along with eggs and turkey bacon wrapped inside a whole wheat tortilla.breakfast burriito

Everyone knows that bacon is not the healthiest option for us. Once in  a while, won’t do much damage, so be careful not to overdo! I used to eat turkey bacon because it has fewer calories and fat than pork bacon. Then I realized that it has more added sugar and may contain preservatives that have been linked to cancer. Turkey bacon can be a good option for people who don’t eat pork, just be sure it’s labeled “organic” so that it’s the healthiest choice.

You can add salsa or  pico de gallo if you want.

  • 1 avocado mashed
  • 1 tomato diced
  • 1 tbsp shallot diced
  • 3 eggs
  • 1/2 lime juiced
  • 2 slices organic bacon
  • 2 whole wheat tortilla


  • Heat a dry, non-stick pan over medium heat and cook the bacon until crispy, then set aside. In the same pan, make the scrambled eggs.
  • Prepare the guacamole by mixing the mashed avocado with the diced tomato and onions. Drizzle with lime juice and season with salt and pepper to taste.
  • Heat a grill pan over medium heat and assemble the burrito. Divide everything between the two wraps, layering the guacamole, cooked eggs, and crispy bacon. Fold all the sides in and place them on the grill pan.
  • Grill for about 2-3 minutes on each sideuntil browned. Serve hot or cold.
