Ingredients
- 3 cups all-purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- ½ tsp salt
- 2 cups sugar
- 1 cup vegetable oil
- 2 tsp vanilla
- 3 large eggs
- 2 cups mashed (very ripe) bananas (approx. 5 medium)*
- 1 cup crushed pineapple (drained) - reserve liquid
- 1 cup macadamia nuts (chopped)
- 1 cup shredded coconut (unsweetened)
- 1½ cups confectioners (icing) sugar
- 4-5 tsp pineapple juice
Recipe Description
This Aloha Bundt cake is loaded with the very best Hawaii has to offer – bananas, pineapple, coconut, and macadamia nuts! You can easily customize and remove certain ingredients if you don’t have them/don’t like them, or switch up the type of nuts etc. If you don’t have a Bundt pan this can be baked in two 8″ or 9″ loaf pans!
