Artisha’s/Hyioka Old Fashion Rice Pudding, Will make 12,1cup servings
This is My Great Grandma Lupe’s Recipe, passed down to me, It is over 140yrs old
1 =Large Thick Stainless Steal Pot
2= Medium or 1 Large Pyrex Dish
3 &1/2= Cups Sticky or Pearl Rice, do not use long grain,
1&3/4= Sticks Real Butter
1/2= Gallon of Whole Milk
1=Pinch of Salt
1&1/4= Cup Sugar
6= tbsp Vanilla
1=tbsp Cinnamon
1=Big box of Raisins
1=Can Condense Milk
3=cans Evaporated Milk
4=Cups Water
SOAK RICE AT LEAST 3 HRS PRIOR TO COOKING! (DRAIN WATER)
Mix Canned milk & water together, put to side, will use during thickening…..
Combine in a lg pot all the butter,the whole milk, the pinch of salt & condense milk…on high heat.. Bring to a foamy boil about 15 minutes (STIRRING CONSTANTLY)
Add the rice,sugar, vanilla & cinnamon bring to boil adding the canned milk mixture all during the cooking process so pudding does not thicken to soon! must use all the canned milk mixture to complete recipe..
Reduce to medium/low heat (CONSTANTLY STIRRING)for 20 minutes add 1/2 box of raisins then lower heat then taste rice for tenderness….
When ready pour into the Pyrex dishes sprinkle raisins on top & sprinkle cinnamon, let cool & after a while put in frig to chill…..
