I love blintzes but I hate making crepes. With this recipe, you simply mix up the crepe batter and pour half of it into a baking dish. Bake it for 10 minutes until it sets, then layer the cheese filling, and the rest of the batter on top. Bake for another 35-40 minutes and voila! You have the taste of blintzes without the fuss.
Intrigued? Now you just need an excuse to make it, so I’ll give you one. I think this would be a perfect thing to make for brunch or dessert on Canada Day, don’t you?
