  • oatmeal oats: 1 cup
  • 1/2 cup chopped pecans (optional)
  • 1/4 cup light brown sugar

  • 1/4 cup flour for crumble
  • 3 cups blueberries
  • 1 tbs lemon juice

  • 6 tbs butter: 3 for crumble 3 for blueberry mix

We have a blueberry tree and I love coming up with new ideas to use the fresh blueberries.  I also love to cook with a castiron skillet.  It just gives it a flavor you can't get from anything else.  This is a great dessert that is quick and easy to make.  Can be served with vanilla ice cream.  Hope you enjoy it!

Recipe Directions

Spray your cast iron skillet with a non-stick oil.  I would not use olive oil as it gives it a flavor you may not like.  Set aside and prheat the oven to 375.  Mix oats with chopped pecans, light brown sugar, cinnamon, salt, honey and 1/4 cup of flour. Put in fridge to get cool while making blueberry mixture.  Wash blueberries lightly.  Over stove on low heat, add sugar, butter, 1/4 cup flour and 3 teaspoons lemon juice with berries.  Cook for about 5 minutes on low.  

Add blueberry mixture to the cast iron pan and then put the crumble on top pour melted butter over top.  Bake for 35 minutes on 375 or until bubbly hot and brown.
