  • ¼ cup dark soy sauce
  • ¼ cup fish sauce

  • ¼ cup dry sherry
  • 2 whole cloves of fresh garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp granulated sucanat (can substitute brown sugar)
  • ½ tsp white pepper

Beautiful rich chunks of meaty pork belly is slow braised in a mixture of fish sauce, fresh cilantro, rice vinegar, sherry, fresh ginger, and fresh garlic. Serve over steamed rice and with lots of stir-fried fresh vegetables. Leftovers can be made into a deliciously flavorful, quick and easy fried rice.
