Ingredients

  • 500 gr. / 1 lb broccoli, I used frozen you can use fresh if you like
  • 2 carrots
  • 1 onion
  • 1 garlic clove
  • 1 medium potato
  • 1.2 lt / 40.5 fl oz. vegetable stock
  • Salt, pepper
  • Olive oil for sautéing the vegetables and for sprinkling on top of the soup
  • 100 gr. / 3.5 oz. goat cheese, grated
  • Croutons for topping

Recipe Description

This broccoli soup, has an intense, green color. Sautéeing the vegetables before adding the stock, gives a more profound body to the soup. I added some cheese, preferably goat cheese but if you don’t have, just add any other cheese you have available in your fridge, then it becomes even more filling and tasty. The whole thing took me no more than 30 minutes from beginning to end.
