- 3/4 cup Vegetable Oil
- 1 cup Sugar
- 2 Eggs
- 1 1/2 tsp Vanilla
- 1 cup Flour
- 1 tsp Baking Soda
- 1 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 (20 oz)can Crushed Pineapple, packed in juice, drained well, reserve juice
- 1 cup grated Carrots
- 1/2 cup Raisins
- 1/2 cup Flaked Coconut
- 1/2 cup chopped Walnuts
- Cheesecake batter:
- 16 oz softened Cream Cheese
- 3/4 cup Sugar
- 2 1/2 tsp Vanilla
- 3 Eggs
- Frosting
- 8 oz softened Cream Cheese
- 1/2 cup softened Butter
- 4 cup Powdered Sugar
- 3 tbsp reserved Pineapple juice from crushed pineapples
