- 3 cups all-purpose flour

- 2 tsp. baking powder

- 1 1/2 cups chopped walnuts or pecans
- 1 1/2 cups shredded carrots
- 4 eggs
- 1 cup canola or vegetable oil
- 1 tsp. vanilla

These muffins are so easy to put together and when they are baked they have the consistency of a muffin and the flavor of carrot cake. Leave them plain or frost them as I did the next day with the remaining muffins.
Great for dessert, after school snacks or in the morning with coffee or tea!
