- ½ cup natural cocoa powder
- ¾ cup either plain flour or all-purpose gluten-free flour
- ½ tspn baking soda
- ¾ tspn baking powder
- ¼ tspn salt
- 2 large eggs
- ½ granulated sugar
- ½ light brown sugar
- ½ vegetable oil (or canola)
- 2 tspn vanilla essence
- ½ cup buttermilk
- 1 cup + 1 Tbspn champagne (or sparkling wine)
- 230g (2 sticks) butter
- 3½ cups icing (powdered) sugar

So why should you make these cupcakes? Just because they can be made gluten-free? Well that is definitely appealing for some people, but gluten or not these cupcakes are just to-die-for amazing. Like totally. They pack a good punch of chocolate flavour, but are still amazingly light and fluffy and they don’t dry out, you can even make them a few days in advance. Cool right? They are the perfect vessel for any sort of frosting, but in particular… Champagne frosting. Need I say more?
