Ingredients
- 1/4 cup couscous
- 1/2 cup water
- 1 (19 oz) can chickpeas
- 1/2 red onion
- 1/2 red pepper
- 2 cups chopped broccoli
- 1/2 tsp dill
Recipe Description
Herbed chickpea salad is loaded with veggies, fibre and protein and packs extremely well. We found it got better as it sat in the fridge. The couscous soaks up all the flavor and adds a nice texture to the salad. I made this salad to bring along on our latest vacation. It was great to pull out something healthy to go along with the usual picnic suspects
