This easy holiday breakfast casserole is delicious and can be made ahead of time for the perfect dish to just pop in the oven in the morning. It’s got potatoes, sausages (optional), and cheese. It’s totally flexible so you can add anything you want or substitute bacon for sausage. Our family has always looked forward to this casserole every Christmas.
