It is that time of year when the sun comes out and the kids get hot and want something cool to snack on.  This recipe is simple, healthy and your children will love them.  Making organic fruit popsicles for your kids offers several benefits, including promoting helathy eating habits, offering a refreshing and hydrating teat.  It is a great source of vitamins and minerals and is so fun to make.

I use coconut water but Yogurt adds a wonderful creaminess to popsicles. It also adds flavor, protein and probiotics! You can also add juice instead of coconut water.  If you choose to add juice to the popsicles, I suggest using fresh pressed juice if you have a juicer. If not, you can buy juice that is unsweetened (no added sugar) and is not from concentrate. Better Goods makes a great organic juice.

Other Additives:

  • Citrus Juice (lemon or lime) - Citrus juice is important in these popsicles because it helps keep the consistency you want and cuts through the sweetness.
  • Honey is a magical natural sweetener. It is my favorite sweetener to use for these popsicles because it has so many amazing benefits, but you can always substitute it for agave or cane sugar.
  • Vanilla extract goes so well with fruits and adds a flavor punch. If you don't have vanilla, you can always omit or use vanilla flavored yogurt. 

Equipment

  • Blender (if using yougurt)
  • Popsicle mold: there are a lot of different type of molds out there to choose from.

1st:  Cut your fruit an put them into your molds.  Then simply add the coconut water and freeze for 6-8 hours.  If you use yogurt, blend the yogurt and all ingredients in a blender.  You can add coconut water or organic juice as well.  Pour into molds and freeze 6-8 hours.
