  • 1 box white cake mix
  • 1 cup pineapple juice
  • 1/3 coconut rum: (can use pineapple juice if want no alcohol)
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup crushed pineapple (drained)
  • 1 cup grated coconut
  • 1/2 cup coconut cream
  • 2 cups whipped cream
  • 1/2 cup Maraschino cherries to decorate

Recipe Description

This is one of those desserts that will become a family favorite.  It is sweet and decedent.  Simple ingredients and simple instructions but will end up looking like and tasting like you made this amazing cake from scratch.  If you like pineapple, you are going to love this cake and so will all your friends and family.

Instructions
1. Preheat the oven to the temperature indicated on the cake mix box.
2. In a large bowl, combine cake mix, pineapple juice, coconut rum, vegetable oil and eggs. Mix according to package instructions.
3. Add the crushed pineapple and half of the grated coconut to the mixture.
4. Pour the mixture into a previously greased and floured cake pan.
5. Bake according to package directions or until a toothpick inserted in the center comes out clean.
6. Let the cake cool completely.
7. Mix the coconut cream with the whipped cream and spread over the cold cake.
8. Sprinkle the rest of the grated coconut on top and decorate with maraschino cherries.
