Summertime is all about outdoor BBQ's and picnics.  Pineapple coleslaw is a great item for any outdoor event.  It is cool and taste and so easy to make.  Adding Pineapple to your coleslaw gives it this hit of sugar and sweetness that makes your slaw so unique.  Eveyone will love it and ask you for the recipe! Instructions:

  • In a large bowl, whisk together vinegar, sugar, mayonnaise and pepper. Add pineapple and slaw mix. Toss to combine. Chill.
  • I used a bag of shredded coleslaw mix. Feel free to chop your own cabbage.
  • For the pineapple, I drained a can of chopped pineapple and used 1 cup of the pineapple chunks. You can use fresh pineapple if you prefer.
  • Can add a tablespoon of pineapple juice from the canned pineapple if you would like. Don’t add too much or the coleslaw will be runny.
  • Feel free to toss in some toasted coconut or jalapeños to the coleslaw. SO good!
  • Can coleslaw be made in advance? Yes! You can mix up the coleslaw the day before serving and store covered in the refrigerator.
  • The coleslaw will keep 3 to 5 days tightly covered in the refrigerator.
