Ingredients
- 1 lb boneless chicken thighs
- 1 large onion
- 1 bell pepper
- 3 stalks of celery
- 2 quarts stock or water
- 3 garlic cloves
- 1 1/2 teaspoons thyme
- 1 bay leaf
- 3 tablespoons creole seasoning
- 2 lbs peeled shrimp
- 2 cups cooked white rice
- All of the roux from the night before
- The beans drained from the night before any will do
Recipe Description
It is that time of year. It is cold outside and you are craving something warm and satisfying. This gumbo is the perfect match. It is perfect for one of those days were you are cleaning and straightening up around the house. It is an overnight meal. Nothing real hard to do, it just takes a little bit of time and planning. The results are worth it though and it makes a ton, so freeze some for later. The two things you need to start on the night before is the roux and the soaking of the beans. This can be done the night before your cleaning/wash day.
