Frittata is kind of like a omelette but without the folding. The wonderful thing about this dish is that you can add anything you have left over in the fridge. You got to love a recipe that makes leftovers look so good! Serve with some fruit and you have a meal you can enjoy anytime of day. I love breakfast for dinner.
