If you are a fan of strawberries, you are going to love these Strawberry Pie Cupcakes with strawberry buttercream frosting. I started with a box cake mix, then stuffed each cupcake with strawberry pie filling, and topped them off with the best strawberry butter cream frosting. My kiddos have made a few requests this past week for some cupcakes for dessert. I recalled how much the entire family enjoyed our Apple Pie Cupcakes this past fall. Since strawberries are a family favorite, I knew a strawberry cupcake would perfect.
