This stuffed tomatoes recipe is amazingly easy and worked out great for a busy night after work. I had one of “those” days and wanted something simple, healthy and tasty. I hit the trifecta with this recipe. Be sure not to overcook the lentils or they will get slightly mushy. The flavor is all there and these stuffed tomatoes were incredible.
