Albondigas are actually meatballs, mexican style. This is such a satisfying soup, and yet fairly light as well. The meatballs are the star here, the broth and vegetables are the supporting players. It’s not spicy, but is very flavorful and best of all, satisfying, especially in the down days of winter, or its last gasp.
