Ingredients
- 1 cup all purpose flour, gluten free
- 1 cup instant oats, gluten free
- 1 cup white sugar
- 2/3 cup light cream
- 1/2 cup applesauce, unsweetened
- 2 large eggs
- 1 medium granny smith apple, peeled and chopped small
- 2 1/2 tsp double-acting baking powder
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
- 1/4 tsp kosher salt
Recipe Description
These gluten-free muffins are a delicious addition to your morning breakfast routine. Moist, sweet apples and substantial oatmeal, these freeze and travel well. Top with cinnamon and serve warm or cold. Of course you can make this recipe with regular flour if you’re not fond of gluten-free flour, just use 1 cup of all-purpose flour instead of the gluten-free flour, and decrease the baking soda to 2 tsp.
