Bass with Creamy Tomato & Basil Sauce
Ingredients:
1-2 lbs. of Bass
1/2 cup chopped shallots
1 cup chopped fresh basil
1 large chopped tomato
1 cup white wine (use half for sauce and half for baking fish in oven)
1/2 cup heavy cream
1 tbsp butter
1/2 tbsp of soy sauce
1 EVOO
1 tsp of crushed capers
Salt and pepper to taste
Directions:
Pour EVOO into a sauce pan and add shallots, cook until soft then add tomatoes, basil and wine. Reduce it to half and then add cream and capers, reduce again until creamy and slightly thick. Set aside.
Place the bass in baking dish and marinate with the soy sauce for about 5 min. Then add the butter and the other half of the white wine and Cook on 375 for 10-12 min depending on thickness of fish.
