Ingredients
- 1 T vegetable oil
- 1 T butter
- 1 lb chicken tenders
- 2 T fajita seasoning
- 2 C chopped peppers (any combination of red green, yellow and/or red)
- 1 C sliced red onion
- 12 oz bagged salad
- 1 avocado sliced or diced
- 1 lime cut into wedges
- 2 T freshly chopped cilantro
- Optional: crushed tortilla chips
Recipe Description
Everything you love about fajitas transformed into a hearty entree salad. If you are watching your carbs just leave off the tortilla chip "croutons". This is the kind of salad I like to make for dinner and then save the leftovers and create a lunch wrap from the leftovers the next day. It's like getting two meals out of 1!
