Recipe Description

About a week ago, with my son’s birthday quickly approaching, I asked him what he wanted for his special birthday dinner. Growing up, my family always had a birthday tradition of being able to pick their favorite thing to eat for dinner on their birthday. My selection was always my mom’s meatloaf with mashed potatoes. It made my brother and dad dread the day because they did not like meatloaf, so it was always even more fun choosing that as my special meal. Anyhow, so I decided to carry on the tradition and ask my son what he wanted. I said “out of anything I can make, what would you like for your dinner”? Do you know what he said? He asked for peanut butter banana toast!!!! I was shocked! WHAT?! Really? Are you sure?Uhhhhhhh…..ok??? So I decided to let it go and try again the next day, just to verify. Sure enough, over the next few days, his answer was the same. Peanut Butter Banana toast please! After giving up hope and finally coming to the realization that my son was going to have toast for his special meal, he surprised me the day before his birthday and had a change of heart. *No, I did not persuade him, : ) He woke up that morning and said “mama, I changed my mind. I want a cheeseburger and french fries”. I was so excited!! I ran to the store, bought the ingredients, and on his birthday, we whipped these burgers up. He ate his burger up happily and claimed it was “the best burger of his whole life”. He is 7 now, so I’ll take that! In 7 years, he has never had a better burger! I’d call that a win!!
