What’s better on a cold winter’s day than a piping hot bowl of soup and a ooey-gooey, cheesy, grilled cheese sandwich? For this one I’ve used multi-grain panini bread, part skim mozzarella and provolone cheese and jammed it all full of fresh spinach. I cooked it on an indoor grill pan until golden brown and perfect!
