This salad is nice and light and reminds me that it is summer and to enjoy my outdoors as much as possible. The bonus part of this recipe is it is Weight Watchers friendly, vegetarian and vegan. I found this to be an easy dish to whip up for barbecues and potlucks and maybe even to keep in your cooler for camping trips. And with all those fresh tomatoes growing in our gardens, we could all benefit from more ways to use them.
