Ingredients
- 3 pounds of russet potatoes, peeled and cut into 1 and ½ inch pieces
- ¾ cup of milk (I used 1%)
- 4 tablespoons of butter, melted
- 1 cup of sour cream
- kosher salt and pepper to taste
- 1 and ⅔ cups of shredded cheddar cheese, divided use
- ½ cup crumbled cooked bacon
- ¼ cup finely chopped chives
- 2 tablespoons finely chopped parsley
- Cooking spray
Recipe Description
This make ahead loaded mashed potato casserole takes plain mashed potatoes to the next level by adding sour cream, bacon, chives and cheese. It’s like a loaded baked potato but in casserole form. This is a very impressive side dish but it doesn’t really require much more effort than a batch of traditional mashed potatoes.
