What to do with a ton of blueberries? Make blueberry muffins of course! With the addition of the coconut flakes, these little gems have an extra little pop of flavor. If you're counting calories and don't want the extra fat you can leave the coconut out. But it's such a great addition and gives the muffins that extra little oomph that makes them even more special! And it's the good kind of fat so go ahead and indulge a little!
