- 2 big handfuls fresh arugula
- 2 green onions, sliced
- ½ teaspoon salt

Recipe Description
This crustless mini quiche recipe can be whipped up very quickly and is full of flavor! They’re quick and easy (and gluten-free), and the variations are endless! I like to substitute in spinach for the arugula and my husband loves it when I throw some bacon in there (yes – with the ham). Add some onions and peppers for even more flavor!
