  • 12 oz chicken sausage, precooked, sliced (I used garlic variety, but flavor is your preference)
  • 1 sweet onion, sliced
  • 2 cloves garlic, minced
  • 14.5 oz diced tomato (preferably one with Italian seasoning)
  • 4½ C vegetable stock (or broth)
  • 12 oz pasta, dry
  • 6 oz spinach, fresh
  • Optional: parmesan cheese, grated

Throw all your ingredients in one pot, cover it and cook and dinner is ready in less than a half hour. How’s that for a weeknight timesaver. Looking for a vegetarian option?
