  • 1-2 guajillo chiles, de-veined and boiled in water.

These are a traditional Mexican breakfast that I like to refer to as “Breakfast Nachos.” The red sauce is spicy and smoky and pairs perfectly with the freshly fried tortilla chips, shredded chicken, cheese, and crema.
