Ingredients
- 1-5 pound (2.27 kg) bag of Red Bliss Potatoes (also called Red Potatoes), leave skins on, wash, cut away any bad parts and cut into ¾ inch pieces
- 1 cup (6 ounces) chopped celery
- ½ cup (3 ounces) yellow onion, chopped
- 2 large hard-boiled eggs, chopped
- ½ cup (.6 ounces) fresh dill, chopped
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon kosher salt for boiling the potatoes *see my tips for success below
- Salt and pepper to taste, for serving
