Ingredients
- 2-3 tomatoes (or 10 cherry tomatoes)
- 2 potatoes (if desired)
- 2 beets (if desired)
- 1-2 medium zucchini
- 1-2 peppers large sliced
- 1 large onion
- 2 carrots
- 1 head of broccoli and or cauliflower (half and half)
- 1 eggplant
- 10-12 mushrooms halved
- 2 cloves of garlic chopped
- ⅓ cup (43 grams) olive oil
- 1½ teaspoon (1 gram) oregano
- 1 teaspoon (5 grams) salt (1/4 - ½ teaspoon 1-2 grams extra for sprinkling)
- 4-5 fresh basil leaves chopped
- 3 sprigs fresh rosemary (leaves removed from the stems) or 1 - 1½ teaspoons (1 gram) dried rosemary
- hot pepper flakes if desired
