Ingredients
- 2 lb boneless chicken breast
- 2 limes juice 1 and slice 1
- 1/3 C honey
- 1 C salsa verde
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- chopped cilantro
- 2 avocados sliced
- 3-4 C prepared rice
- 1 can black beans rinsed and drained
- 1 C shredded cheese mexican blend or monterey jack blend
Recipe Description
This recipe is a great weeknight meal option. It starts with chicken. Chicken that can be prepared in a slow cooker or in the Instant Pot. Don't have time for either of those, just grab a rotisserie chicken and chop it up. Just layer your ingredients in the bowl on top of rice and you've got a healthy dinner or lunch.
