- 1 large yellow onion, sliced

- 2 (15 oz.) cans fire roasted diced tomatoes
- 1 tbsp. turmeric

- 1 tsp. cumin
- 1 tsp. cardamom
- Sea salt and fresh ground pepper, to taste
- ½ cup reduced-sodium chicken stock
- 1 (15 oz.) reduced-sodium chickpeas, rinsed and drained
- 1 cup matchstick carrots
- 1 cup frozen peas
- 2 tbsp. fresh cilantro, chopped

Slow Cooker Chicken Tikka Masala with Vegetables in a creamy, spicy, curry-like sauce. This “dump and go” slow cooker dish is a healthy dinner recipe perfect for busy weeknight meals. I decided to bump up the nutritional factor by adding chickpeas, garden peas and matchstick carrots. I used greek yogurt to make it creamy and topped with some fresh cilantro!
